How do I know what knife to use in the kitchen?

Here are some general guidelines to help you choose the right knife for the job:

  1. Use a chef's knife for a wide range of tasks, including chopping, dicing, mincing, and slicing.
  2. Use a cleaver knife for chopping through bone.
  3. Use a butcher knife for chopping through bone and other tough materials, splitting poultry or crushing garlic, chopping through thick vegetables, such as squash or pumpkins, and tenderizing meats. 
Use a boning knife for removing bones from cuts of meat, for deboning chicken, fish, and other small cuts of meat, as well as for separating meat from the bone in larger cuts, such as a roast.
